Sweating is the body's way of cooling down. The most obvious and basic explanation would be to say that the water we sweat out absorbs the heat given off by the body. Whilst this is true, absorbtion would not cool us down enough. For a start, the water passed out through our skin is at approximately body temperature anyway.
It is the molecular change of water to water vapour that uses the excess heat energy. As an example, water at 100 degrees is referred to as boiling, but the water remains water. It is not util more heat energy is applied that the water becomes water vapour. It is the molecular change from liquid to gas that takes up the unwanted heat energy, for example during exercise.
This change from liquid to gas is referred to as a change of state. The same applies in reverse i.e. when a gas condenses and becomes a liquid.
